Crepioca – tapioca and egg flatbread

Crepioca is Brazil’s quick breakfast: a thin flatbread of tapioca starch and egg, naturally gluten-free, ready in ten minutes and filled savory or sweet.

Crepioca – tapioca and egg flatbread

Method

  1. Whisk the eggs with the water and salt. Stir in the tapioca starch until no lumps remain. Let it rest for two minutes and stir again, because the starch settles quickly.
  2. Warm a non-stick pan (20–24 cm) over medium heat with a little butter or oil.
  3. Add one ladle of batter per serving and spread it thin. Cook for 1–2 minutes, until the edge lifts and the surface turns matte.
  4. Flip the flatbread and cook for 30–60 seconds more.
  5. Slide onto a plate, add cream cheese and tomato (or banana and cinnamon) and fold over. Eat right away.
Tips
  • Consistency: The batter should be as runny as pancake batter. If it gets too thick, stir in a teaspoon of water.
  • Heat: Medium heat is enough. If the pan is too hot, the flatbread tears and stays soft inside.
  • Fillings: cream cheese with tomato, cheese with ham, or sweet with banana and cinnamon.
  • Honest note: In Brazil, classic tapioca is usually made from moistened “goma de tapioca”. This recipe is the version with egg and ordinary tapioca starch.

Frequently asked questions

What is the difference between tapioca and crepioca?

Classic tapioca is a flatbread of moistened tapioca starch without egg. Crepioca also contains egg, turns out softer and folds like a thin crêpe.

Can I prepare crepioca ahead?

It is best baked fresh and filled right away. Once cooled it can be warmed briefly in the pan, but it turns firmer.

Is crepioca gluten-free?

Tapioca starch and egg contain no gluten by nature. With coeliac disease, look for packs labelled gluten-free and check the fillings.
